Spinach and walnut ricotta cannelloni

Dough Wrap

  • 110 gr sifted flour
  • pinch of salt
  • 1 egg
  • 1/4 litre milk

    To begin, put the flour in a bowl, it is always best to sieve it first to avoid lumps.

    Add the salt and the egg. Stir and gradually add the milk. Keep for at least 30 minutes in the fridge.

Cannelloni filling

  • 2 Onions.
  • 1 Sweet pepper.
  • 500 g Spinach.
  • 2 Cloves of garlic.
  • Salt and sweet pepper.
  • 150g Walnuts.
  • 200g Ricotta cheese or cottage cheese

1 step boil the spinach

2 step sauté the onion, cut into small squares, until it is golden with the garlic.

3 step add the sweet pepper, in little squares

Final step

when everything is cooked to your taste, add the spinach, walnuts and ricotta, stir and leave to cool.

Now take the mixture from the fridge, take a frying pan and add a little oil or butter. With a soup spoon, add a little of the batter to the hot frying pan. 1 or 2 minutes per side is enough, we make a tower of wrap.

When we have made all of them, we put some of our beautiful and delicious filling, we make a roll and we put it in a baking pan.

Filleto sauce

  • 1 Sweet pepper
  • 1 Onion
  • Tomato Sauce

    For the sauce, in this simple case, sauté the onion, when it is golden brown add the sweet pepper, after about 5 minutes add the tomato sauce, and cook for about 10 more minutes

    Now we have the Cannelloni in the roasting pan. Waiting to bathe in the sauce we just made.

    We cover them with the sauce, add grated cheese to taste, you can use the cheese that you like, in my case I like parmesan sometimes.

    We put our preparation in the oven for 10 minutes to gratinate and vuala!

    Personal advice

    In my experience making this recipe, the only complication that can arise is in making the pancakes, but my personal tip is that the pan should be in the best possible condition. When it is already hot, take it off the heat, tilt it a little and put the mixture from the highest side to the lowest, which will fall by the weight of gravity, and with the hand that holds the pan, we will try to make a circle.

    The sauce can be whatever you like, white sauce, bolognese etc!
